Protein Coconut Flour Brownies

One of the main foods that kept me from my weight goals was sweets. Since I have been on a journey to optimal self-wellness and health, I have made countless desserts to kill the cravings of my strong sweet tooth. Brownies was the number one food that no matter how many low carb brownies recipes I have tried on the web, I couldn’t find one that reminded me of Ghirardelli Triple chocolate goodness.

This recipe was originally a mug cake recipe and one night I thought, what if I were to double or even quadruple this mug cake recipe, will I make the optimal brownies? After making the recipe and then making a couple of tweaks. I made the perfect cakey brownies, to make even better, each serving is a huge portion, you’ll see.

Anytime I make sweets I always try to add protein powder in it as well which also increases satiety. I used a pea protein, I heard collage peptides works better when it comes to baking but I have never tried it myself. The amount of eggs seems a lot but it is because I decided to use coconut flour which is very dense and can make the texture of the baked good dry. I have never tried to make this with flax eggs or chia eggs but you can use only egg whites instead of whole eggs if you want to keep the protein amount up and the fat content and calories to a minimum.
